BBQ Lamb Kofta Kebabs

Ingredients

  • 500gr minced lamb
  • 2 crushed garlic cloves
  • 2 tbs chopped fresh mint
  • 2 tbs chopped fresh parsley or coriander
  • 2 tsp ground cumin
  • chilli flakes to taste (Optional)
  • salt and black pepper

Method

These delicious lamb kofta  skewers are quick and easy to make. Minced lamb is blended with fresh herbs and spices, shaped around a skewer and grilled on the barbecue. Enjoy with a Greek salad, minty yogurt dressing and flat bread (please see our recipes, perfect to cook in your Amigo wood fired oven).

  • Mix all the ingredients in a mixing bowl along with a drizzle of olive oil, pinch of salt and pepper.
  • Divide into 8 balls and flatten them into about 1cm thick
  • Cover and chill for about 15 mins to firm up
  • Thread on a metal skewer and brush with a little olive oil and place on bbq grill to cook
