Blackberry Clafoutis

Ingredients

  • Handful of berries
  • 2 free range eggs
  • 75ml full fat milk
  • 20gr unsalted melted butter
  • 3 tbsp caster sugar
  • 50gr plain flour
  • 1/2tsp vanilla extract

Method

Clafoutis is a baked French dessert of fruit, traditionally black cherries, arranged in a buttered dish and covered with a thick flan-like batter. You can use any seasonal berry for this recipe, but don’t add too many as it will make the base too moist.

Add this dish to your oven after a roast, if oven not hot enough add some more wood. It will then be perfectly time to   to eat at the right temperature (warm) after your dinner.  Serve with lashes of whipped cream.

Oven: Medium – Temperature approx 220c

Door: Closed

Dish: cover with foil and remove the last 10 minutes or so.

Cooking time: Approx 30 minutes, insert knife in the middle if it comes out clean it is ready to serve.

  • Grease a baking dish with the butter and sprinkle with sugar until coated evenly. Tip out excess.
  • For the batter, whisk eggs, sugar and vanilla until all incorporated. Add flour, whisk until smooth, then slowly add milk,  cream, salt and melted butter. Pour batter in your greased baking dish and place the berries into the batter.
  • Place tray in your Amigo oven  with door shut. Once cooked, remove from oven, sprinkle with caster sugar and serve warm with whipped cream or custard.
