Christmas Turkey in your Amigo Oven!

Yes why not cook your Christmas Turkey in your wood fired oven? We recommend you use your Amigo oven all year round.  We have used this recipe for many many years. The turkey stays very succulent and moist.

We recommend you soak the entire turkey in a large container overnight filled with water, cut up lemons and whole peppercorns.

I have written up two different cooking methods. One using a falling oven the other using maximum heat – putting the turkey in at maximum heat of approx 550c cooks the bird quicker (approx 2 hours).

Why not add your roast potatoes.

Ingredients

  • 1 Turkey
  • 1 Large white onion
  • 4 cloves of garlic
  • 4 rashers of smoked bacon
  • 1 small bundle of fresh thyme
  • 1 small bundle of fresh rosemary
  • 2 tbsp olive oil
  • Sea salt & cracked black pepper

Method

Full heat method:

  • Start by firing up your oven to maximum temperature (550c).
  • Remove turkey from packaging and rinse inside and out. Pat dry with paper towels.
  • Cut onion and lemon in half and place inside the cavity of the turkey with garlic and fresh herbs.
  • Truss the bird to keep everything inside. Coat the entire turkey with olive oil and season with salt and pepper, place bacon on top of bird. Place the turkey on a cooking tray with plenty of stock in your wood fired oven. Cover and seal very well with aluminium foil. Shut the door. Remove the foil the final 15 minutes or so to brown the skin.
  • Allow to rest for 10 minutes before serving.

Falling oven method:

  • Start by firing up your oven to maximum temperature (550c) and allow the oven to cool to a roasting environment (approx. 200c).
  • Remove turkey from packaging and rinse inside and out. Pat dry with paper towels.
  • Cut onion and lemon in half and place inside the cavity of the turkey with garlic and fresh herbs.
  • Truss the bird to keep everything inside. Coat the entire turkey with olive oil and season with salt and pepper, place bacon on top of bird. Place the turkey on a cooking tray with plenty of stock in your wood fired oven.
  • Shut door.  When the skin on the topside of the turkey has been sufficiently browned, cover well in aluminium foil. Continue to roast till cooked. Allow to rest for 10 minutes before serving.
