Crispy shoulder of pork

Thank you to our Amigo Alex Chaili for this wonderful looking should of pork cooked in his woodfired Amigo Oven!

Cooking Method:

Rub the skin with sea salt, pepper, cracked fennel and coriander seeds. Build the oven up to temp with your chosen wood. In my case applewood, let it fall to about 310c. 2.5 hours covered in foil. Then uncovered to crisp up the crackling. Cuts like soft butter.

Oven: high – Temperature approx 310c

Door:  Closed and shut off air above

Time: 2.5 hours covered with foil, then uncovered till crispy
