Ingredients
- 4 x 100g salmon fillets
- 1 x small pieces of matchstick shaped ginger
- 300g broccoli
- 2 tbsp low-salt soy sauce
- 1 tbsp clear honey
- 1 finely chopped garlic glove
- a little sunflower oil
Method
These easy steamed fish parcels are a quick and favourite dish to cook in your Amigo wood fired oven. The Japanese seasoning along with the amazing taste of being cooked in a wood fired oven is sure to be a crowd pleaser. You can prepare the parcels up to a day ahead.
- Firstly fire up your oven to its maximum temperature and leave to cool until it reaches approx 200°c.
- Make the marinade: In a small bowl, mix together, the soy, honey, garlic and set aside.
- Cut out 4 squares of foil, each about 30cm square and brush with a little oil. Bring the edges of the foil up a little.
- Fill your foil parcels with a couple of broccoli stems and sit a salmon fillet on top. Scatter over the ginger and spoon the sauce/marinade over each fillet. Drizzle with a little sesame oil if you like
- Fold over the edges of the foil together and seal. Place the salmon parcels on a suitable baking tray/sheet. Place the tray into your wood fired oven and leave to bake for approx 15-20 mins. Once cooked to perfection remove from oven and leave to stand for a few minutes.
- Serve with fresh salad and new potatoes. Quick, easy and delicious!
