Smashed crispy baby potatoes

Ingredients

  • Baby potatoes
  • Salt & black pepper
  • Paprika
  • Melted butter
  • Olive oil
  • Parsley

Method

Sometimes the easiest recipes are the tastiest. This is certainly the case with these crispy smashed baby potatoes!

Add them to your hot oven and cook alongside your roast for the last 20 minutes or so – they taste amazing!

Oven: Medium – Temperature approx 200c

Door: Open or closed

  • Boil the potatoes until soft. Drain and place on an oiled baking tray. Gently smash the potatoes  flat with a fork or potato masher. Drizzle with olive oil and melted butter. Add a sprinkling of salt, pepper and paprika.
  • Place tray in your Amigo oven alongside your roast for the last 20 minutes or so .  Spin the tray (so they cook evenly) and cook until golden.  Remove the tin from your wood fired Amigo oven and serve straight away.
  • Try adding a clove of garlic or some grated cheese.
