Ingredients
- Olive oil
- 4 cloves garlic, peeled and finely sliced
- 1 bunch fresh basil, cut/torn in small pieces (or dried herbs)
- 3 x 400 g tinned plum tomatoes or passata
- Salt and pepper
Method
- Add approx. 4tbs of olive oil in non-stick frying pan.
- Fry the garlic until it browns slightly.
- Add the basil and tomatoes.
- Season with salt and pepper.
- Bring it to the boil and leave to simmer until the sauce has reduced.
- Push any large bits through a coarse sieve.
- Remove basil and garlic.
