Tomato Base


  • Olive oil
  • 4 cloves garlic, peeled and finely sliced
  • 1 bunch fresh basil, cut/torn in small pieces (or dried herbs)
  • 3 x 400 g tinned plum tomatoes or passata
  • Salt and pepper

  1. Add approx. 4tbs of olive oil in non-stick frying pan.
  2. Fry the garlic until it browns slightly.
  3. Add the basil and tomatoes.
  4. Season with salt and pepper.
  5. Bring it to the boil and leave to simmer until the sauce has reduced.
  6. Push any large bits through a coarse sieve.
  7. Remove basil and garlic.
