Wood Fire Gammon Joint

Boiled, baked or roasted, a smoked gammon joint is a traditional meal ideal for busy cooks as it is easy to prepare for a weekday meal, yet attractive enough to serve to unexpected guests. This particular dish does not require pre boiling.

Ingredients

  • Gammon joint
  • Honey
  • Brown Sugar
  • Mustard
  • Worcestershire Sauce
  • Tomato Paste
  • Balsamic Vinegar

  1. Fire up your Amigo wood fired oven until you reach approx. 550c.
  2. Place your gammon joint in an oven proof tray/dish. Add stock with a little orange juice, black pepper, bay leaves, onion, couple of stalks of celery and 2 roughly chopped carrots. Seal the tray very well with good quality aluminium foil and place in the oven. Cook with your oven door shut for approx. 2 hours, depending on the size of your joint.
  3. Glaze: Stir together honey, brown sugar, mustard, Worcestershire sauce, tomato paste and balsamic vinegar in the small mixing bowl to make a simple glaze. Approx 2 hours in to the cooking time, remove the gammon from the oven, glaze the joint with the above mix and decorate with sliced oranges. Place the foil loosely over the gammon and put dish back into the oven for another 30 minutes or so.
  4. Remove tray from the oven, leave to stand . Delicious served with oven cooked jacket or roast potatoes.
