Wood fired Pitta Bread

Pitta breads are the most fun things to make as you see them burst to life in front of you. They are easy to prepare and excellent accompaniment with most meals.

To begin, fire up your Amigo oven to maximum temperature (approx 550c) and let the oven temperature drop to approx 300c. Cook the pittas on the base of the oven, fire to the left, door open like you would a pizza. They take seconds to cook. We turn them to cook the pittas evenly.

Once the pittas were cooked, we used the residual heat to cook tasty dishes like kofte kebab which is a great partner with pitta bread and some tzatziki.

Ingredients

  • 500grs white strong bread flour (or 50/50 white/wholemeal)
  • 14 g instant yeast (2 sachets)
  • 2 tsp salt
  • 6tbs good quality olive oil
  • Approx 300mls lukewarm water

Method

  • Mix all the above ingredients together in a food mixer and prove until doubled. Knock back, roll into balls approx 100g each. Then roll out to shape, fairly thin thickness.
