Method

These wood fired sticky chicken wings are a favourite at any outdoor summer dinner party and are very quick to prepare.

  • Fire up your wood fired Amigo oven to its maximum temperature, then allow time to cool to around 180°C.
  • Meanwhile, put all of the marinade ingredients in a large bowl and combine. Toss each chicken wing in the marinade. If you have time, leave the wings to marinate in the fridge for a couple of hours or overnight.
  • Place the wings on a high-heat baking tray, cover well with foil and bake in your wood fired oven for around 45-60 minutes with the door closed.
  • Take the tray out of your Amigo wood fired oven, remove foil, drain any liquid or place onto another clean oven tray. Add a couple of logs and get the fire/flame going again. Pop back in the oven for a further 10-15 minutes or so until slightly crispy, turning occasionally leaving the door open. Keep an eye on the wings as they tend to burn quickly.
