INSULATION
Our commercial ovens are insulated with specialist high heat insulation board placed underneath the cooking floor of the oven. This is essential for extended heat retention and high capacity pizza cooking.
The dome is insulated with 1260 degree rated insulation wool. Combining the insulating nature of the oven material and additional insulation of hearth and dome gives our ovens excellent heat retention. The ovens’ insulation ensures a reduced wood consumption and lower running costs.
COMPOSITION, DENSITY & WEIGHT
The oven is crafted from an extremely dense mix, purposely designed refractory clay brick bound by not only refractory mortars but a combination of aggregates that together provide a durable heat retaining flame resistant mortars.
The oven’s weight reflects its density, quality and thermal capabilities.
OVEN FIRING UP TIMES
The oven can reach optimum cooking temperatures (550c), depending on the size of the oven, within 45-60 minutes when lit from cold. Reduce this time to approximately 30 minutes when re-lighting the oven from the previous day.
